Sauciers

A saucier has a long handle and is sold without a lid. It has slightly rounded sides for efficient stirring and whisking. The rounded sloped sides differentiate it from a traditional saucepan. Without corners, stirring and whisking are easier.

The sloped sides also make a pan that is wider at the top than at the base. This encourages reduction of sauces through faster evaporation.

A large saucier may also be used for stir-frying. The sloped sides, similar those of a salad bowl, allow for easy tossing of ingredients.
