Sauce Pans A saucepan has deep, straight sides, a long handle and comes with a lid. A lid is a must for some recipes but you also use it open. Most rice recipes call for a lid. Most sauces are made without a lid because they require stirring and reduction (a process that concentrates flavors through evaporation). |
